Aloo Gobhi is all time favourite north Indian recipe. There are various ways of preparing it and today I am preparing it with whole small sized potatos and onions with big florets of cauliflower. It is made with yoghurt based gravy and whole spices. You can consider making this on special occasions or parties.
Ingredients:
4-5 small size potatoes
4-5 small sized onions
6-8 cauliflower florets big size
1 ½ tbsp oil + oil for deep frying
1 tsp Cumin seeds
1 tbsp ginger garlic paste
¾ cup Yoghurt
Whole spices (1 inch Cinnamon piece, 4-5 Black pepper, 3-4 cloves, 2 Bay leaf)
1 tsp Red chili powder
¼ tsp Turmeric powder
1 tbsp Coriander powder
½ tsp Garam masala powder
Salt to taste
Coriander for garnishing
Method:
Remove the skin of onions and make half slit on both sides by ensuring that you don’t cut the onion into pieces. Peel skin of potatoes and pork them with fork. Cut cauliflower into big florets. Wash potatoes and cauliflower with water. Boil potatoes till half cooked. Now deep fry potatos, onions and cauliflower on medium flame until they are fully cooked.
In a bowl add yoghurt, red chili powder, turmeric powder, coriander powder, salt and whisk till all ingredients are mixed well. Heat oil in a pan, add cumin seeds and whole spices. Add ginger garlic paste, yoghurt mix and cook it on low flame for 5 minutes. Now add fried vegetables and mix well. Cook it for 5 more minutes. Sprinkle garam masala and garnish with chopped coriander. This dish is served hot.
