Kheer is a very common dessert which is made quite often in our homes. There are different varieties of kheer such as rice kheer, seviyan kheer, sabudana kheer, makhana kheer etc. Today I am posting recipe of Phool Makhana Kheer. Phool makhana are very healthy and are considered as good source of protein. During fasting normally people eat sabudana, potato etc. which are high in carbohydrates and if you add this kheer as another fasting dish then it makes good balance of carbohydrates and protein. Most importantly, this Kheer is equally delicious like other Kheer.
1 ltr Milk
1 cup Makhana
1 tsp Ghee
6-7 tsp Sugar
¼ tsp Cardamom powder
In a thick bottom pan, boil milk till it reduces to half while stirring continuously. In another pan, heat ghee and fry cashews. Keep them aside and then fry raisins. Keep them aside and now roast makhana on low flame in the same pan till it becomes crispy.
Crush few makhana coarsely. Now add remaining makhana, crushed makhana, fried cashews and raisin to the reduced milk and cook till makhana becomes soft. Now add sugar and cook for another 5 minutes till sugar dissolves. Add cardamom powder and mix well. Serve it hot or cold.
