Gond ki raab is very nutritious. I was introduced to this dish during the fasting season. It is considered as “must have” recipe on the occasion of breaking the fast, which in our religion (Jain) is known as “Parna”. Even if all family members are not fasting but everyone enjoys the parna feast. Being yummy dish, it used to be my motivation for doing the fast. Even this raab is given to lactative mother.
2 tbsp Ghee
1 tbsp Edible gum (small pieces)
2 tsp Sugar
2 tbsp Grated Dry Coconut
Heat ghee in a pan. Add edible gum and let them puff up. Add 1½ cup of water, sugar and boil for half a minute on low-medium flame. Lastly, add chopped almonds, grated coconut and boil for another half a minute. Raab is ready and it should be served hot.
