Lauki Kofta Curry

Lauki Kofta Curry

1 cup Grated Lauki (Bottle Gourd)
2 tbsp Besan (Gram flour)
1 ½ tsp Red chili powder
½ tsp Turmeric powder
2 tsp Coriander powder
½ tsp Coriander seeds
1 tsp Cumin seeds
Salt to taste
¼ tsp Garam Masala powder
4-5 Cashews
½ tsp Poppy seeds
1 tbsp Grated dry coconut
¼ cup full fat Milk
1 cup Yogurt
2 tbsp Ghee
Oil for deep Frying

Soak cashews, poppy seeds and grated dry coconut in hot milk for 15 minutes and then make a fine paste of it.

In a bowl, add grated lauki, besan, cumin seeds, coriander seeds, ¾ tsp red chili powder, ¼ tsp turmeric powder, salt and pinch of garam masala powder. Mix well and make small size balls (with these ingredients, approx 12-14 balls will be made). Heat oil in a pan and deep fry the kofta balls on medium flame till they turn in golden brown colour. Lauki kofta is ready, keep it aside.

Heat ghee in a pan, add cumin seeds. Mix the beaten yogurt, ¾ tsp red chili powder, 2 tsp coriander powder, ¼ tsp turmeric powder and salt in a bowl. Add this yogurt mixture into the pan and stir it continuously for 3-4 min on a low flame. Add cashew milk paste and boil it for 1 minute. Now add lauki kofta in the gravy and let it boil for 2-3 minutes. Lauki koftas will absorb little moisture from the gravy so add ¼ cup water and boil for 2 minutes on low flame. If required, add more water to maintain the gravy consistency and lastly add garam masala powder. Garnish with chopped coriander. Dish is ready and is served hot.
