1 cup Fresh Coconut (Grated)
3 cup Milk
3&half tbsp Sugar
5-6 Pistachio (unsalted)
Few strands of Saffron (optional)
In a non-stick pan, heat milk and add grated coconut. Mix well and then add saffron strands and cook it for almost 1 hour on low flame while stir it regularly. Now add sugar and cook it for another 5 minutes so that sugar melts well. Add cardamom powder, mix well & cook for another few minutes so that it becomes thick. Put off the gas and immediately pour the hot mixture in a thali/plate greased with ghee based on the desired thickness of Barfi. Spread the mixture and press it with the base of a small bowl. After 5 minutes, garnish it with chopped pistachios. Once it cools down, cut into square shaped pieces and gently remove it for serving.
