Rajasthani Special…..another dish with yummy Gatte

Gatte Ki Khichdi

Ingredients:

For Gatte –
2/3 cup gram flour
3 tsp ghee + for deep frying
1 tsp red chili powder
1/4 tsp turmeric powder
1/2 tsp cumin seeds
Salt to taste

For Khichdi –
1 cup Basmati Rice
7-8 Cashew halves
7-8 Raisins
2-3 black peppercorns
2-3 cloves
2-3 Green Cardamom
2 Bay leaf
1/4 tsp Black Cumin
1/4 tsp Cumin Seeds
2 tbsp Ghee
11/2 tsp Red chili powder
2 tsp Coriander powder
1/4 tsp Turmeric powder
Salt to taste
1/2 cup Fresh peas (optional)
1/2 cup Grapes (optional)

Method:

Wash/Rinse rice and soak it for 30 min.

Mix gram flour, 3 tsp ghee, 1 tsp red chili powder, 1/8 tsp turmeric powder, 1/8 tsp cumin seeds, salt in a bowl and knead it into tight dough by putting approx. 3-4 tbsp hot water. Divide the mixture into 5 equal portions and roll it into a long cylindrical roll shape (called as “Gatte”). Cut these Gatte into small piece. Now deep fry these Gatte on a medium flame, till it turns light golden and keep aside.

Heat a big thick bottom pan and add ghee into it. Add all the whole spices, cashews, raisins and fry them. Now add drained rice, fried gates, red chili powder, turmeric powder, coriander powder, salt and mix them well. Now sauté gently for 2-3 minutes in a way that rice gets well coated with spices and ghee. Pour 3 cup hot water and stir well. Cover the pan tightly and let it cook on a low flame. Keep checking in between whether rice is well cooked or not, if water is absorbed you may need to add some more water until the rice is well cooked. Once the rice is cooked then turn off the gas/heat, your dish is ready to be served…..

Notes: This is mainly a jain dish to be eaten on auspicious tithis. Alternatively, we can add peas and grapes while cooking rice along with fried gatte. Garnish with fresh chopped coriander leaves at the time of serving.
