Sonth Dhaniya Ki Barfi

Jain Paryushan Parv is going on when every Jain try to do fasting in any possible manner whether for hour, hours, day, days or week….. Here comes a dish, which provides internal strength to body after fasting…. “Sonth Dhaniya Ki Barfi”.

Sonth Dhaniya Ki Barfi

Ingredients:

1/2 cup Coriander powder
1/2 cup Ginger powder
1/2 cup Grated Coconut
1/2 cup Crushed Almond
50 gm Edible Gum (Gond)
1 cup Grated Jaggery
2/3 cup Ghee (clarified Butter) + 3tbsp Ghee

Method:

Heat 3 tbsp ghee in a pan and fry the edible gum (Gond) in 2 batches as the Gond tends to swell and it’ll not be properly fried if done altogether. Fry the crystals till they become golden brown. In a bowl, mix coriander powder, ginger powder, grated coconut, crushed almond and edible gum puffs.

Heat remaining ghee in another pan and add jaggery into it. On a low flame, cook jaggery until it melts, mixes well with ghee and bubbling starts. Add coriander powder-ginger powder mixture into it and mix well. Put off the gas and immediately pour the hot mixture in a plate/thali greased with ghee. Spread and press evenly with the base of a small bowl. Before it cools down, cut it into square shaped pieces. Cool for an hour and once it is set, gently remove pieces for serving.
