Gur Ki Mathri / Saankli

Traditional Rajasthani Sweet Snack….

Gur Ki Mathri or Saankli


1 cup whole wheat flour
1/2 cup Gur/Jaggery (grated)
1 tsp white sesame seeds
2 tbsp oil + for frying


Soak grated Jaggery in 1/4 cup hot water, until it melts. Add wheat flour, oil and sesame seeds and knead dough. There is no need of extra water to knead the dough. Then make small size balls and roll them in shape of small size poori (circular), having diameter of 3-4 inch and prick it with a fork.

Fry the pooris on a low flame till it become golden in colour. As the pooris are sweet, it will be ready in minimum time on low flame. Take it out and let it cool down, the Mathris are ready to eat……

Note: Above ingredients are for making 20-25 Mathri. It can be stored for 15 to 20 days in an air tight container.
