Lauki Ki Barfi

A yummy dessert from a boring vegetable 🙂

Lauki ki Barfi


250 gm Bottle Gourd/Lauki (peeled and grated)
1 litre Milk (full fat)
1/3 cup Sugar
Saffron strands
2 tbsp ghee (optional)
5-6 Pistachios
1/4 tsp Cardamom Powder
1 or 2 Silver Vark


In a non-stick pan, heat milk and add bottle gourd. Mix well and then add saffron strands, chopped pistachios and cook it for almost 1 hour 15 minutes on low flame while stir it regularly. Now add sugar and cook it for another 5 minutes so that sugar melts well. Add ghee (for shining/better look), cardamom powder and mix well. Cook it for another few minutes so that it becomes thick. Put off the gas and immediately pour the hot mixture in a thali/plate greased with ghee based on the desired thickness. Spread and press it with the base of a small bowl. After 5 minutes, garnish with placing silver vark on it. Once it cools down, cut into square shaped pieces and gently remove the pieces for serving.
