Kheer

Ingredients:

1.25 ltr Milk (full fat)
2 tbsp Rice
1/3 cup Sugar
4-5 Cardamoms
8-10 Almonds (Chopped)
8-10 Pistachios (Chopped)
8-10 Raisins
7-8 strands of Saffron

Method:

Wash rice and soak it for 30 minutes. Heat milk and when it starts boiling, add soaked rice, raisins and saffron into milk and boil on low flame for almost 1 hour 15 minutes while stir it on regular basis. Now add sugar, almonds and pistachios (keeping aside some for garnishing) and boil for another 5-7 minutes so that sugar is completed melted and mixed. Kheer is ready, garnish with almonds, pistachios and serve hot or refrigerate for an hour and serve cold.
