My favourite sweet since childhood…..



200 gm Wheat Flour
200 gm + 3 tbsp Ghee
200 gm Jaggery
3/4 cup Dry Coconut (Grated)
100 gm Almond (Crushed)
50 gm Edible Gum (Gond)


Heat 100 gm ghee in a pan/kadhai and add wheat flour. Mix well and roast it on low flame/heat for almost 20-25 minutes until it becomes reddish in colour. Now remove this roasted ghee-aata mixture in a bowl. Heat 3 tbsp ghee in another pan and fry the edible gum (Gond) in 2 batches as the Gond tends to swell and it’ll not be properly fried if done altogether. Fry the crystals till they become golden brown. Add fried gum, crushed almonds and grated dry coconut (reserve some for garnishing) in roasted ghee-aata mixture and mix well.

Break the jaggery into small pieces. Heat remaining ghee in a pan and add jaggery into it. On a low flame, cook jaggery until it mixes well with ghee and bubbling starts. Add ghee-aata mixture into it and mix well. Put off the gas and immediately pour the hot mixture in a plate/thali greased with ghee. Spread and press evenly with the base of a small bowl. Garnish immediately with grated coconut. Before it cools down, cut it into square shaped pieces. Cool for an hour and once it is set, gently remove pieces for serving.
