Sabudana Vada

Ingredients:

1 cup Sago Seeds (Sabudana)
2 medium Potatoes boiled and mashed
1/2 cup roasted peanuts coarsely ground
2 Green chillies finely chopped
2 tbsp Fresh coriander leaves chopped
1/2 tbsp Lemon Juice
1/2 tsp Red Chilli Powder
Salt to taste
Oil for deep frying

Method:

Soak sago seeds in water for 3 hours. Remove the excess water and add to it the mashed potatoes, peanuts, lemon juice, coriander leaves, green chillies, red chilli powder, salt in a bowl. Mix all these ingredients well, divide the mixture into 12 lemon sized balls and flatten it like tikkis. Heat oil in a pan and deep fry these Vadas till they are golden brown. Serve hot with tomato ketchup or coriander chutney or any chutney of your choice.
