Lauki Ke Gatte

Bottle Gourd (Lauki) is usually considered as most boring vegetable, though it is one of the most healthy food. To provide a good flavour to lauki, here comes a dish “Lauki Ke Gatte” which I hope everyone will like. Another advantage of this dish is that it is one meal dish which doesn’t need any side dish.

Lauki ke Gatte

Ingredients:

250 gm grated Bottle Gourd (Lauki)
1 cup Whole wheat flour
2 tbsp Gram flour
½ tbsp Coriander seeds
2 tsp Red chili powder
½ tsp Turmeric powder
Salt to taste
1 medium sized chopped green chili
2 tbsp Chopped Coriander
1 ½ tbsp Oil
Pinch of Asafoetida
½ tsp Cumin seeds
½ tsp Mustard seeds
1 tsp Red chili powder
½ tsp Turmeric powder
2 tsp Coriander powder
Salt to taste
Coriander Leaves for Garnishing

Method:

In a bowl, add grated bottle gourd, wheat flour, gram flour, coriander seeds, red chili powder, turmeric powder, salt, chopped green chili, chopped coriander and make a dough without adding any water. As bottle gourd/lauki naturally contains water, so for kneading the dough, water would not be required. If dough is too tight then add little water to make it smooth. Divide the dough into 5 equal portions and make long cylindrical rolls (about 1” diameter). Boil these rolls for 15 min in 3 cup water on low-medium heat/flame. To check whether it’s cooked or not, insert knife into the rolls and if it comes out clean then it means rolls are cooked. Then cut them into almost 1”long pieces (Gatte). Your dish is ready to eat if you don’t like oily food. Add ghee and few drops of lemon juice while serving.

To add another flavour to Gatte, heat oil in a pan, add asafoetida, cumin seeds and mustard seeds. When mustard seeds start crackling add Gatte in the pan along with 1 tsp red chili powder, 1/4 tsp turmeric powder, 1 tbsp coriander powder and salt to taste. Mix all these ingredients well and let it cook for 2-3 minutes on medium flame. Your dish is ready, garnish it with chopped coriander and serve it hot. Adding few drops of lemon juice will make its taste best.

Note: Above ingredients are for 2 full meal servings.
