Vegetable Pulao Paratha

Leftover food is always a problem for everyone. To solve this to some extent, here is a yummy solution for leftover vegetable pulao. Today I am posting recipe of the ‘Vegetable Pulao Paratha” which is made from the left over pulao. This way it helps to clear the leftovers without any complaint from family as it tastes excellent and no one will be able to know that it is made from leftover food.

Vegetable Pulao Paratha

Ingredients:

1 cup Vegetable Pulao (leftover)
1 cup Whole wheat flour
1 ½ tsp Red chili powder
½ tsp Turmeric powder
1 tsp Coriander powder
½ tsp Fennel seeds
½ tsp Carom seeds
½ tsp Sesame seeds
Salt to taste
2 tbsp chopped coriander
Oil for cooking parathas + 1tbsp

Method:

In a bowl, mash the leftover vegetable pulao with the help of potato masher and add all the above ingredients with one tablespoon oil. Mix it properly and add enough water to make smooth dough. Make medium sized ball of the dough and roll them into parathas. Put on the gas and heat-up the tawa on medium-low flame. Cook both sides of parathas with some oil until the parathas becomes golden brown. Serve the parathas hot. It also tastes good with raita/pickle/tomato ketchup/coriander chutni.
