Gajar Halwa

Welcome winters with a sweet treat. The most popular sweet dish of winters is Gajar ka Halwa, and today being my mother’s birthday, I am dedicating this recipe to her, from whom I had learnt the cooking skills.

Gajar Halwa

Ingredients:

500 gm Carrot 1 1/2 litre full fat milk 1/2 cup + 2 tbsp Sugar 3 tbsp Ghee 7-8 Almonds 7-8 Pistachios ¼ tsp cardamom powder or 4-5 Cardamoms

Method:

Soak almonds and pistachios in hot water for one hour. Remove the skin and finely chop it. Wash carrots, peel and grate it. Heat a thick bottom pan and add 1 1/2 tbsp ghee. Put carrots into the pan and stir it for 3-4 minutes. Now add milk into the pan and let it boil on a low to medium heat. Stir it occasionally and after half an hour add chopped nuts. Once milk is completely absorbed by carrots (after almost one and half hour), add sugar and remaining ghee. Mix it well and keep stirring it. When sugar is dissolved, put off the gas and add cardamom powder. Your dish is ready, serve it hot for best taste.
