Gatte Ki Sabji

Here is the most popular and traditional dish of Rajasthan which everyone might have heard about and is cooked more often in Rajathani kitchens…..

Dry GatteGatte with Gravy

Ingredients:

  • 1/2 cup gram flour
  • 1 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1 1/2 tsp coriander powder
  • 1/2 tsp cumin seeds
  • Salt to taste
  • 1 cup yogurt
  • 5 tbsp ghee
  • 1/4 tsp dry mint powder
  • Water

Method:

Mix gram flour, 3 tbsp ghee, 1/2 tsp red chili powder, 3/4 tsp coriander powder, 1/8 tsp turmeric powder, 1/8 tsp cumin seeds and salt (as per taste) in a bowl and knead it into tight dough by putting approx. 3-4 tbsp hot water. Divide the mixture into 5 equal portions and roll it into a long cylindrical roll shape i.e. Gatte.

Boil these gatte for 15 min in 3 cup water on medium-low heat. Once bubbles are observed over gatte, it means they are cooked. This can also be checked by putting knife into gatte and if knife comes out clean then it means they are cooked. Cut these gatte into small pieces and mash only 3-4 small pieces of gatte. Do not throw the water used in boiling gatte.

Mix the beaten yogurt, 1/2 tsp red chili powder, 3/4 tsp coriander powder, 1/8 tsp turmeric powder and salt (as per taste) in a bowl. Heat the 2 tbsp ghee in a pan, add cumin seeds and then add yogurt mixture. Stir it continuously for 3-4 min on low-medium heat. Add the boiled gatte, mashed gatte and water used in boiling and bring it to boil. Your dish is ready to be served. Before serving, sprinkle 1/4 tsp of dry mint powder and serve it hot.
