Aloo paratha is the all time favorite paratha. It’s a nice dinner option. There are different ways to prepare the stuffing. Some likes it non fried masala and some likes the fried masala option. I like the later one. So here is the my way to make aloo parathas.
2 cups Wheat Flour
Salt to taste
Water as required
4 medium sized Potato
1 Onion (chopped)
1 medium sized green chilly (chopped)
½ tsp ginger paste
½ tsp Mustard seeds
½ tsp Cumin seeds
½ tsp Red Chili powder
1 tsp Coriander powder
1/8 tsp Turmeric powder
Salt to taste
¼ tsp Amchur (dry mango) powder
¼ tsp Garam masala
½ tsp Dry pomegranate
1tbsp Oil + oil for cooking parathas
1 tbsp chopped Coriander
Mix wheat flour, salt and water (I put 3/4th cup) to make a smooth dough. Rest the dough for 15 min.
Boil potatoes and mash them. Then add red chili powder, coriander powder, turmeric powder and salt. Heat oil in pan, and then add cumin seeds and mustard seeds. Now add ginger paste, chopped onion and green chili. Then add the mixture of mashed potatoes and spices into the pan. Mix well and now add amchur powder, garam masala and dry pomegranate. Also add chopped coriander into it.
Roll the dough ball and press it and keep the stuffing in the middle and cover it from all sides towards the middle. Dust the platform with flour and roll it as thin as possible.
Heat tawa and cook the parathas both the sides in medium low flame and add brush with little oil both the sides, till parathas become golden brown.
